I would like to include the tracking URL and tracking number of the shipped order to an outgoing email to a customer.
I see that you have short codes in order status event, but I do not see tracking URL and tracking number as an option. Can I add my own short codes ? or is this something you have to add ?

You can't add your own shortcodes as of now, however, if you want you can order the customization.
Although, In the latest version of sellacious, 1.6.0-alpha, users can view the updated shipping information and track the orders. Below is one screenshot of the updated the shipment info.
