You can disable checkout option from global config. That way in your whole shop add to cart or buy now button won't be visible.

As for seller details, you can select the store pages for that. In that seller needs to fill their information and customers will contact them according to that.

You can do this by selecting the pricing type Call for the price or Email for the price while editing the product.

By this feature, you'll have the seller contact details in the product.
