I have disabled several menu items and selected them to not appear, but they still show to all users. I want to de-list much to simplify the typical user's options. If needed, I can then turn them back as the admin.
How can i keep these disabled / turned off items from appearing?

Enable sellacious backoffice menus from the Sellacious Backend > Global config > Backend display options. After that, you can hide show menus from the Sellacious Backend > menu manager.
